The Sous Chef Cook will employ both culinary and time management skills in order to play a critical role in maintaining and enhancing the upscale Guest dining experience at Joshua Creek Ranch, one of the premier hunting lodges and sporting resorts in the world.

Responsibilities

• Support Executive Chef in all things BOH and Culinary
• BOH shift leader for breakfast/lunch, dinner, and/or special events as scheduled
• Cooking in multiple outlets including both public and private guest dining venues
• Fine dining featuring wild game, gourmet cuisine, and regional favorites
• Food preparation and cooking for multiple events, and daily reservations
• Oversee all food quality, consistency, timeliness and guest satisfaction during shifts
• Strict adherence to Ranch recipes and menu rotations as set by Executive Chef
• Standard operating procedures in accordance with food/health safety policies
• Maintain all kitchen facilities, equipment and kitchenware
• Resourceful troubleshooting and issue resolution as needed
• Ensure positive BOH team chemistry and professionalism
• Develop solid working relationship with FOH team
• Special events planning and new recipe development
• Ability to interact with guests when appropriate

Requirements

• 2+ years of experience as a commercial cook and/or sous chef
• Understanding of various cooking methods, ingredients, equipment, and procedures
• Excellent record of kitchen and shift supervision
• Familiar with industry best practices
• BS degree in Culinary science or related certificate would be a plus
• Food handler's and Food manager's certificate
• Ideal candidate might live in Boerne, Comfort, Kerrville (surrounding Hill Country area northwest of San Antonio) and/or not mind commuting to rural location 15 minutes north of downtown Boerne
• Compensation Depends on Experience
• Must be able to work evenings, weekends, and most holidays
• Must be reliable, flexible, and ready/willing to work team player

Compensation

• Combined Hourly Rate Up to $30+/Hour DOE (Base Rate + Monthly Service Fees)
